Chickpea and lentil stew

Every time I don’t know what food to make, I always end up making this stew. The whole family loves it, and it’s so easy to make.

All you need:

1 yellow onion
2 garlic clove
1 can of coconut milk
1 can of passed tomatoes
5 dl of vegetable broth
2 dl of red lentils
1 can of chickpeas
Paprika
Cumin
1 cube of frozen spinach
salt & pepper

I start with chopping the onion and garlic, and then fry them in a pot. Then I add coconut milk, passed tomatoes, vegetable broth, red lentils and chickpeas and let it all simmer together until the lentils are almost done. Then I throw in the spinach cube, and taste it off with salt and peppar.
It’s perfect to serve with rice.
