Greek salad with tzatziki
When days get busy and I just feel that I want to eat something fast, healthy and really good, this greek salad is really a go to. The taste of vinaigrette and tzatziki combined is just amazing!
All you need is:
1 red onion
1 big tomato
Cucumber
1/2 green pepper
Handful of olives
Plant based greek cheese
Vinaigrette (This time I used a bought one, but you can easy make your own!)
Tzatziki:
1/2 cucumber
1 garlic clove
2 dl of plant based greek yogurt
Salt & pepper
I start with making the tzatziki. Grate the cucumber, and press out all the water. Then mix everything together and taste with salt and pepper.
Then chop all the vegetables and greek cheese, mix them in a bowl with the vinaigrette.
Such an easy, delicious and fresh salad! You can either have it as an side salad to your main meal or just enjoy it for lunch!
