Lentil soup
Today I made a little different lentil soup than I usually do, and it was really good!
I used:
Olive oil
1 yellow onion, diced
2 garlic cloves
6 potatoes, diced
1 sweet potato , diced
Cumin
Paprika poweder
Turmeric
2 tablespoons tomato paste
1 cup green lentils
2 liters vegetable stock
1 cup red lentils
1 can chickpeas
1 can coconut milk
Spinach
Heat the olive oil in a pot. Add the onion, potatoes, sweet potato and garlic and cook, stirring occasionally, until softened slightly. Season with cumin, paprika powder and turmeric cook and stir well. Add the tomato paste and green lentils and then add the vegetable stock and let simmer for 20 minutes. Stir in the red lentils and chickpeas, and cook for 10 more minutes. Add the coconut milk and spinach and let the soup get warm.
