Mix your own salad
Some of my kids are really picky eaters, so today I decided to make “mix your own salad” for dinner, and it was totally a hit for the whole family.
I used:
1 green pepper
2 Tomatoes
1/2 cucumber
Lettuce
2 red onions
1 pack of plant based filet pieces
1 pack of vegan greek “cheese”
1 Avocado
1 can of corn
Olives (especially from Morocco!)
Pasta
Vegan pesto
Broccoli
Plant based creme fraiche to mix with curry, barbecue seasoning & herbal salt for a dressing.
I just chopped everything and put it in different bowls. Boiled the pasta, and kept half of it natural and the rest I mixed with vegan pesto. Fried the filet pieces with a lot of curry and cumin. Easy and healthy dinner, and most of everything; kids friendly!
