One-pan with tofu and vegetables
I’m a single mom of 6 so somedays it’s all about how easy it is when it comes to food. Today is one of those days, the kids are hungry and we all just want to eat and then relax on the couch in front of sonic 3, but at the same time I really don’t want macaroni and “meat”balls so today I’m making a simple “All-in-one” dish with whatever I had at home.
I used:
1 Red pepper
1 Zucchini
1 Onion (we prefer red onion but didn’t have it at home)
2 Garlic cloves
Potatoes
Broccoli (frozen)
1 block of soy marinated Tofu (180g)
and some fresh Parsley
I just chopped everything into the size I wanted it to be and spread it out over the baking sheet before pressing the garlic over it and mixing it all, then I seasoned with salt and pepper.
I used the oven at 200 degrees hot air for about 20 minutes
