Strawberry cake

Today its midsummer here in Sweden, so of course I hade to make a strawberry cake, its tradition! I didn’t really succeed with the cake base this time, even though I always use the same recipe. The taste was still the same as usual, but I think I had it in the oven for a little bit to long this time.

For the cake base I used:
4½ dl flour
3 dl sugar
3 tsp baking powder
2 tsp vanilla sugar
50 g dairy-free margarine
2 ¾ dl oat milk

Filling:
Raspberry jam
2 banans
Plant based whipped cream
Plant based vanilla sause
Strawberries


Preheat the oven to 200 degrees. Mix the dry ingredients. Melt the margarine, mix with the milk and stir into the dry mixture.
Bake the cake in the lower part of the oven at 200 degrees for 45 minutes. Let the cake cool and then slice it into 3 different layers.
On layer number one I put raspberry jam and banans, the second layer custard sauce and on the top layer whipped cream and strawberries.
