Tofu and broccoli pie

I haven’t done a food pie in soooo many years, because I never knew what to use instead of the egg base, but then a few days ago I tried a mix of chickpea flour, water and oat milk, and it turned out really good.

Pie dough:

125 g plant-based margarine
3 dl flour
3 tbsp water
0.5 tsp salt

Filling:

1 block of tofu
1 yellow onion
Broccoli
1 tomato
Plant based cheese

Chickpea mix:

6 tbsp chickpea flour
6 tbsp water
3 tbsp cooking oil
3 dl oatmilk
1 clove of garlic
Salt
Pepper
Paprika powder


Preheat the oven to 225 degrees.

Begin with the pie dough
Pour the flour and salt into a bowl and press together with the butter.
Add the water and mix until smooth.
Roll out into a thin dough on a floured baking sheet.
Place in the pan and prick the bottom with a fork.

Filling
Mix all ingredients in a bowl until all lumps are gone.

Filling
Grate the cheese.
Cut the broccoli into smaller pieces. stir-frie the tofu, onion and broccoli until they get a little bit of color.
Place everything in the pie crust, top with tomato and sprinkle with the grated cheese.
Pour over the filling.
Bake in the middle of the oven at 225 degrees for about 30-40 minutes, depending on the size of the pan you are using. The pie is ready when the filling has set.
