Vegan Kebab (Kobideh)
Kobideh is a classic type of Persian kebab and this is my vegan interpretation of the dish.
I used one bag of vegan shapeable mince 850g, I left it to defrost for a couple of hours before use.
Then I seasoned it with
3 tbsp of Cumin powder
2 tbsp of Sumak (Spice from the Middle East)
3 tbsp of Paprika powder
1 tbsp of Turmeric powder
3 Garlic cloves
Fresh Flat-leaf parsley (I used about 30g).
Mix it well and start forming your kebab before putting it on an oven dish. It doesn’t need much time in the oven, 10 minutes in 225º (I use hot air setting so maybe ad two minutes without).
Serve with rice or like I did in pita bread with vegetables and a tzatziki (and bulgur for those who want it).
