VEGAN POKE BOWL with noodles and tofu

1 pack of rice noodles
1 pack of soy marinated tofu
Salad
Cucumber
Red onion
Edamame beans
Frozen mango
Avocado
Baby plum tomatoes

Japanese soy
Garlic (spice or fresh)
Chili flakes
Sesame seeds
Sugar and salt
Sriracha mayo

I start by boiling the water to cook the rice noodles with sugar and salt, I use about a tablespoon of sugar and some salt and let it boil before bringing the pan of the stove and putting the noodles in the hot water for 3 minutes. While it does it thing i start chopping my vegetables. The cucumbers I put in a bowl with soy, garlic and sesame seeds and put to the side. When the noodles are ready I rinse them under cold water so that they don’t get sticky and won’t separate.

I usually make this in the serving plates right away so how much depends on how many we are. Noodles in the bottom, then lettuce and then the red onion, tomatoes, avocado and edamame beans around it, the mango I defrost a bit with soy and chili flakes. While I defrost the mango I fry the Tofu in small pieces, all after you own liking. Now I put the cucumber and mango in the plates and end with the tofu, some sesame seeds and sriracha mayo!
