Vegan somali style meat sauce
1 tablespoon of olive oil
1 onion (I love red onion)
2-3 garlic cloves
500 g of vegan mince
3 potatoes
2 tablespoons of tomato paste
200g tomato sauce
1 Red bell pepper
1 teaspoon of cumin powder
1 cube of vegetable stock
About 1/2 teaspoons ground black pepper
2 dl of canned diced tomatoes (I use the fine diced)
Pasta of your choice
I start by dicing the onion and potatoes, then I heat a tablespoon of olive oil in a pan and ad the onion, when it has softened I add the tomato paste and garlic on low heat. Mix together the tomato sauce and a bell pepper in a mixer until completely smooth, after that I add it into the pan with the mince and the potatoes and let it simmer. While it does I add my spices and some water so that the potatoes is covered. When the water is starting to disappear I add my canned tomatoes as a finishing touch and taste. If needed I add some salt. (This time I also added a little bit of fresh basil but I usually don’t, but it’s a nice touch.
